There are plenty of good chaos jewels out there, but at the cost of a lot of defense

First time doing an Occultist, been interested since ascendancy came out, and looking at some builds I've seen this (Alone_plzSendMask character):

I don't know anything about Occultist builds and sad he removed most of the gems from the character so I can't know how it played, but I found that body interesting, the thing about curses socketed on it ignore curse limit and I was wondering if there's any build around it and it would allow me to clear all content, or should stick with a more popular build using Shavronne's? I just felt in love with that Doedre's body and looking he reached 100 with that character was curious since I don't find any builds using it. Looking at the talents too looks he goes full ES with CI too.

What about ES jewels? Are they better than standard passives? Energy from Naugh and Spring Back looks like interesting options
