The Headcrusher doesn't necessarily have one shots either. There's some data available on poe2db. I am not sure if it is 100% correct, but assuming it was: At level 81, 1821 damage. 30% crit.

Two things it does have: What I think is what is the real source of the weird seeming damage amounts, is sunder. Which shockwaves from your minions.

Then it has a pretty hefty bonus of 400% on GAQuadrillaBossRectSlam. I'm not sure what attack that would be or if it is actually used. Either way, that damage gets pretty nasty.

The trick to the monkeh is to stay relatively close and dodge through it. That's much safer than running away from it.

In regards of armor, 80% armor in the tooltip is not 80% reduction vs big hits. It shows the reduction vs average white mob on your level. The actual equation is AR / (AR + damage*10). So if your armor rating is 20 000 and you take 10 000 damage, the reduction is 20000/(20000+10000*10) = 17%.
