Why should they? People who enjoyed 0.1 will enjoy these changes.
I enjoyed 0.1. Even after they released that first nerf patch and the reaction made the devs run and hide, treating patches like a fully released product. 0.1 had the most density of all versions of this game, so I'm not really sure what you are talking about.

This right here. I never understood why people try to make Poe 2 the same as 1 as if Poe 1 doesn't exist anymore.
I'm kind of excited to try the lower monster density design. I've played No Rest For The Wicked before, and I think it's a good direction to go towards.

You have no idea what you're talking about. As just one example, minions have been buffed to the moon. The Tecrod's change alone does that, and there's lots more.

PoE 1 does exist, PoE 2 apparently does not though. If it existed separate from PoE1 it would have its own unique league mechanics instead of just re-hashing PoE1 league mechanics. Make stuff too slow without some other engaging draw and it becomes very very boring. Boring way to long maps, repetitive tile sets, same colors all the time, snooze fest long drawn out grind.
I hope they make more stuff like this. I just wish that they didn't make it all so locked within the class because it makes it hard to mix and match. Infusions are neat but they make the spells rely on them, and spears are cool but why does it all have to be based on parry? Combos and charge generation is good but most sources of charge generation is abysmal. Doing manual executes to build charges is just bad gameplay. Palm skills are awful and so is boneshatter and so will devour be.

Lower monster density is a good thing though definitely.
